I just got your question on my blog about cinnamon rolls... Make the rolls and freeze them after they have cooled--don't ice them. I'd put the icing in a separate container and tape it up (like a cottage cheese carton). Put the frozen rolls in ziplog bags & suck the air out. Mail rolls and icing in a flat rate postage box. If you use "click and ship" online at usps.com and print the label, it actually gets there faster (about 2-3 days). A large box costs about $9 to send.
